Arancini are one of the most famous and iconic Sicilian recipes. The most popular version of this recipe is with ragu (ground meat sauce) and peas, but there are numerous variants like arancini with eggplants, spinach, or ham and cheese. We bring you a tasty Neapolitan version, known as “Palle di riso” or rice balls – smaller and round fried arancini. Unlike the original recipe and its variants, Neapolitan arancini do not contain any filling other than cheese, but we are sure that their texture and taste will satisfy your tastebuds.
Neapolitan Arancini Recipe
A Neapolitan Arancini recipe which pairs a rice ball with a decadent melted cheese sauce.
Ingredients
- 2 ⅔ cups arborio rice
- 3 eggs, lightly beaten
- 2 cups Pecorino Romano cheese, grated
- breadcrumbs, as needed
- pinch of nutmeg
- salt, to taste
- black pepper, to taste
- vegetable oil, for frying
Instructions
- Cook the rice as indicated on the package instructions. Let it cool down completely.
- Combine the rice with the rest of the ingredients.
- With greased hands, form small balls.
- Roll each ball into breadcrumbs.
- Heat vegetable oil over medium-high heat and fry arancini until lightly golden.
- Place them onto paper towels to remove the excess oil
- Serve and enjoy.

Notes
- This is the basic recipe for Neapolitan arancini. You can add other ingredients like diced ham, Provola, or Scamorza cheese.
- For more flavor, you can combine one tablespoon of butter with cooked rice.
